Olives and cheese tequeños

Tequeños are the quintessential Venezuelan appetizer that triumphs wherever it goes. Don’t miss our Iberian version with Manchego cheese and olives. Simply irresistible.

Ingredients 4 people

Prep Time: 1 hour

• 1 cup of olives stuffed with Pimiento

• 3 cups wheat flour

• 1/2 tsp. of salt

• 2 tablespoons of melted butter

• 1 egg

• Water (only if necessary)

• 2 cups Manchego grated cheese

• 1 cup of Piquillo peppers strips

• Extra virgin olive oil

Directions

Step 1: Chop the olives into slices and keep some of them to decorate.

Step 2: In a bowl, mix the flour, salt, butter and eggs with your hands. Knead well and if necessary add water little by little. Let the dough rest 30 min covered with saran wrap. Extend on a floured board and stretch the dough with a rolling pin. Make rectangles of about 1/4" thick cutting the dough with a knife.

Step 3: On the smallest side of the rectangle put some white cheese and peppers on top and plenty of sliced olives with peppers. Roll up making sure to close the edges with your fingers so that the cheese does not come out when frying.

Step 4: In a pot or deep frying pan with plenty of hot oil, fry until browned. Set aside on top of paper towels.

Step 5: In a table or plate present the tequeños. Put some peppers and olives with a skewer to decorate.
