Mediterranean salted cake with olives

Whoever thinks that cakes can only be sweet is because they still don’t know our recipe with Manchego cheese, Serrano ham and Manzanilla olives. Pure Iberian flavor!

• 1 cup Manzanilla pitted olives

• 1 cup of wheat flour

• 1 tbsp. of baking powder

• 1 cup grated Parmesan

• ¾ cup Serrano ham chopped

• 1 tsp. dried oregano

• Pinch of salt

• 3 eggs

• 1 cup of milk

• 1 cup extra virgin olive oil

• Butter


Step 1: Chop the olives into slices and leave some of them to decorate.

Step 2: First, mix the flour, baking powder, oregano, salt, Parmesan, ham and olives.

Step 3: Separately, mix the liquids: egg, milk and oil.

Step 4: Put the two mixes together in a large bowl and whip until well blended.

Step 5: Put the mixture in a rectangular cake mold previously greased with butter and sprinkled with a little flour. Finish with some olives on the top to decorate.

Step 6: Bake at 375º for 40 to 45 minutes. It is ready when pricked with a skewer stick and it comes out dry. Eat at room temperature or cold as desired.
