Roasted peppers, potatoes and olives salad

Ingredients (4 people)
Prep Time: 1 hour
• 3 oz. Manzanilla olives pitted
• 3 oz. Hojiblanca olives pitted
• ½ green pepper
• ½ red pepper
• 4 potatoes
• Extra virgin olive oil
DirectionsStep 1: Wash the potatoes well and cut into pieces with skin on. Cut the peppers in half, remove their seeds and cut into thick strips.
Step 2: In a baking tray, put the peppers and potatoes, add a generous stream of extra virgin olive oil, salt, pepper and stir. Bake at 350ºF for 50 minutes.
Step 3: Remove from the oven and set on a tray, finish with a few sprigs of parsley and the olives on top.
