Fish with olives

• 4 oz. olives stuffed with Pimiento

• 13 oz. tilapia thin loins

• 1 chopped onion

• 1 chopped pepper

• 1 chopped tomato

• 4 sprigs of parsley

• Extra virgin Olive oil

• Salt

Directions

Step 1: Cut the olives into slices.

Step 2: In a pan with a drizzle of extra virgin olive oil, make a stir-fry starting with the onion until it is transparent, add the pepper and tomato until they are soft, add the olives and cook all for 3 minutes more and reserve in a bowl.

Step 3: In the same frying pan without washing it, put a drizzle of olive oil and cook the fish, 3 minutes on one side and two on the other. Add salt to taste.

Step 4: In a dish add the fish, the stir-fry on top and finish with a sprig of parsley.
